1 Kudkud na niyog - got this for 25 pesos - to which I added 1 bowl of warm water
2 slices of squash (or should I call them sections?) sliced very thinly (For this I sliced them <1 cm thick)
1 bunch sitaw - 1" length
As many malunggay as you want - of course dapat proportional naman sa gata :D
1 siling mahaba (optional)
Salt (optional)
Preparations and Cooking Methodology!
1. On the mixture of the niyog and the warm water - try to extract the most coconut milk that you can. Squeeze the milk with cloth - some say cheese cloth - but me? I use un good morning towel. :D Works just as fine.
2. Bring the coconut milk to a boil over medium fire - sa unang kulo - add the kalabasa and the sitaw in. Cover and let them happily boil them for about 5 minutes - if you want the sitaw to be more cooked, then boil them longer. :) If you want to add salt, then add a little now - though personally, I don't kc it will clash with the sweetness of the squash. Kanya kanyang lagay na lang :D
3. Before the sitaw is thoroughly cooked, add moringa in. It will take a minute or two to cook - with the cover on.
4. Once done, serve immediately! Masarap sha over mainit na kain! :D Kaun na ta!
Technically - I realized that gatang gulay is like blanched / boiled veggies - un lang you'd use the more flavorful and fragrant gata than just using water! :D
* When do you put the sili? Depende - on how hot you want the dish to be! :D Longer boiling / cooking will make it hotter! :D
